Creamy Banana Porridge

Ingredients

  • 1 large ripe banana, mashed

  • 1 cup coconut cream

  • 1/2 cup water

  • 3/4 cup almond meal

  • 1/4 cup flax meal

  • 1 teaspoon cinnamon

  • 1/2 teaspoon ginger

  • Good big pinch of each ~ ground cloves, nutmeg & sea salt

  • Coconut flakes, coconut yogurt or granola

Optional Toppings

Dollop peanut butter (my favourite addition!)

Sprinkle of granola

Sliced fresh banana

Raw nuts and seeds sprinkled

Method

  1. Combine all ingredients in a medium saucepan & heat slowly, stirring until deliciously thick (approx 5-10mins)

  2. Add more water if too thick for your liking

  3. Serve with your favourite topping (e.g. granola, maple syrup, cinnamon, fruit of choice)

* Hint: You can grind the almonds yourself using a small spice grinder (it makes about a cup at a time)- fresh tastes better and nutrients are higher
