These are the most delicious pancakes I have ever cooked (and I’ve tried many different recipes) - they are light and wholesome especially with the addition of cacao.
1/2 tablespoon Apple Cider Vinegar
1 medium banana , mashed
pinch of salt
big generous pinch of cinnamon
1/4 cup of water
1/4 teaspoon bicarb of soda
1 cup almond meal
1 generous teaspoon raw cacao (optional)
A little coconut oil for frying
Whisk eggs with apple cider vinegar
Add banana, salt, cinnamon and water and mix well
Add bicarb of soda, almond meal and cacao and mix well.
Heat 1 tablespoon coconut oil in large fry pan over medium heat and add your desired size pancake. I like to cook small ones. Cook for about 2 minutes until bottom of pancake is golden brown, flip and cook other side.
Remove from pan and eat immediately with your favourite topping. Add topping of choice (e.g. coconut butter, slice of banana, maple syrup and a sprinkle of cinnamon!
