Keto Hot Cross Buns


Hurray!! Healthy, guilt-free hot cross buns (that are keto-friendly too!).So you don't have to miss out on your favourite Easter treat this year!

Makes: 8 delicious buns

Ingredients:

Buns: 1/2 cup almond meal 3/4 cup coconut flour 1/2tsp aluminium-free baking powder Pinch tsp sea salt 6 large eggs (or 6 chia eggs for vegan option) 1/2 cup melted coconut oil 2 tsp water (or more if mixture too dry) 1/4 cup Erythritol OR Xylitol powder OR 1 1/2tsp stevia liquid (or to taste) 1/4 cup raisins or currants OR 1/4 cup sugar-free chocolate 🍫 1tsp vanilla extract 1 1/2 tsp ground cinnamon 1tsp ground nutmeg 1/2 tsp ground ginger 1/2 tsp allspice

Glaze: 1 large egg 1 tbsp water 1/2tsp Erythritol OR Xylitol powder

Method: Preheat oven to 175℃. Line a large baking tray with baking paper For the buns, mix all dry bun ingredients in a bowl Add the rest of the wet bun ingredients to the bowl and mix until well combined Create 8 balls from the dough and shape into a bun Place the buns on a parchment paper lined baking tray. To make the cross, mix all glaze ingredients until you have a thick paste. Either pipe onto the buns or gently pour on top of the bun Bake for 25-30 minutes or until golden Allow to cool and store in fridge for 7 days or freezer for up to 2 months To serve, enjoy cold or heat in microwave/oven until warm and smear with spread of choice: grass-fed butter, coconut butter, cacao hazelnut spread, coconut whipped cream or chia-seed jam!
