DIY Chocolate - Salty Peanut


This super easy delectable dark chocolate melts in your mouth and is my favourite chocolate treat (and also one of the favourite Christmas gifts amongst my loved ones).

Perks of this choccy bark:

  • Vegan

  • Ketogenic (high fat, very low sugar)

  • Rich in minerals and nutrients - magnesium, calcium, iron, zinc

  • High in polyphenol antioxidants

  • Super satisfying

Serves: 8

Ingredients:

  • 1⁄2 cup organic cacao butter

  • 1⁄2 cup raw cacao powder

  • 1 tsp vanilla extract

  • 3 tablespoons sweetener of choice: pure coconut nectar, maple syrup or raw honey (or 10 stevia drops pure or flavoured e.g. caramel, vanilla)

  • 1/3 cup roasted peanuts

  • Optional additional toppings: pinch of sea salt, mixed nuts and seeds, coconut flakes, roughly chopped dried gojis/raspberries/cranberries, or freeze dried fruit crumbled

Method:

  1. Line a baking tray with baking paper

  2. Melt the cacao butter in a glass mixing bowl set over a saucepan filled with 1inch of boiling water, on low heat. Mixing regularly to prevent burning.

  3. Once melted remove from heat and mix in cacao powder, salt and sweetener of choice, whisking constantly to prevent lumps forming. Taste the mixture and add more sweetness if necessary

  4. Pour the mixture into the lined baking tray, sprinkle peanuts and other toppings on top then place in the freezer of fridge to set for 20 minutes until solid.

  5. Once set, break into barks and enjoy or store in an air-tight container in the freezer for up to 2 months.
